Chef Scott Bryan left the kitchen of Apiary in the East Village at the end of February. His name has been scrubbed from the website and an employee at Apiary tells Eater that the restaurant will announce his replacement soon. Apiary opened in 2008, and Bryan joined the team in early 2009. The restaurant certainly has its fans, but Bryan's cooking was always the big draw. Eater put it on the Deathwatch in 2010 and took it off the list last summer.
Next month, Bryan and restaurateur Peter Poulakakos will open Bacchanal, a French-inspired restaurant in the recently renovated Sohotel. His menu will include crudo, fresh pastas, grilled seafood, and roasted meat dishes. Bryan has a great reputation among chefs and other people that work in the industry. Anthony Bourdain wrote an entire chapter about the chef's Veritas days in Kitchen Confidential.
