A chef shuffle to report today: Chris Wyman, who was working most recently as the executive sous chef at Oceana, is headed to Scott Conant's flagship Scarpetta in the Meatpacking District, where he will assume the role of executive chef.
His former boss Ben Pollinger confirms the move, and notes that it's a "very amicable parting...he's ready to spread his wings and be on his own." Wyman was at the Midtown seafood restaurant for four and a half years, and his last day will be this Saturday. Eater hears that Wyman cooked an impressive test-meal for Scott Conant, and that he was basically offered the job on the spot. Wyman's replacement at Oceana will be Matt Howard, who has been working at the restaurant for four years.
