Today, Flo Fab reports that David Bouley has hired chef Eiji Ichimura, formerly of Ichimura on the Upper East Side, to man an eight seat sushi counter inside his year-old restaurant Brushstroke. The operation replaces the cocktail bar, and soon the sushi area (which includes two tables) will be separated from the rest of the dining room via a glass wall.
Bouley notes: “We had always planned to do sushi...It was just a matter of figuring it out. Now we have brought in a master and he needed his own venue.” The restaurant is offering omakase tastings starting at $150 (reservations only), plus an a la carte menu.
