East Village: Here's a good way for a restaurateur to deter a good chef from leaving: Make him a partner. Even though chef Matt Hamliton announced to the world he was leaving East Village neighborhood spot Belcourt for Brooklyn's Choice Market just three weeks ago, he's now back in the fold at his former restaurant as an owner. Hamilton tells us that being made partner in the restaurant didn't affect his decision to back out of Choice, but we're guessing it must have been a nice incentive.
