Jean-Georges Vongerichten's newest project, and his first restaurant to open under the watchful eye of the blogging community, Matsugen, is reportedly in soft opening stages now and will open officially tomorrow. Our sources at the Food & Wine Classic bring the word that JGV will leave Aspen on Saturday morning in order to attend the festivities tomorrow night on Church Street. Remember, this project is over a year in the making, and the folks at Jean Georges Inc. have kept the details on the revamp of the 66 space close to the vest.
