Tim and Nancy Cushman are planning an American restaurant with Mediterranean influences inside the Park South Hotel on East 28th Street. The new restaurant, dubbed Covina, is slated to open this spring. The Cushmans currently operates a branch of their Boston sushi restaurant O Ya in the hotel, and they also handle the food and beverage for the rooftop lounge, which is called The Roof at Park South. The restaurant will have a Stefano Ferrara oven which Tim will use to make pizzas. Counter Culture coffee, pastries, and sandwiches will be served during the day in a cafe area.
The Cushmans opened O Ya NYC last June. Ryan Sutton gave the restaurant two stars, and he put its wagyu-dusted omelet on his best dishes of 2015 list.
