Dustin Wilson, the Master Sommelier currently in charge of the wine program at Eleven Madison Park will soon be parting ways with the freshly four-starred fine dining restaurant. Wilson tells Eater that he'll be leaving soon to pursue his own project, though he won't yet say what that project is. According to EMP reps, Cedric Nicaise, current head sommelier and resident expert of opening wine in crazy ways, will take his place as wine director, while Jonathan Ross will be promoted to head sommelier.
Wilson started at EMP in 2011, soon after becoming the 107th person to pass the Master Sommelier exam. Before that he also worked the Little Nell in Aspen and RN74 in San Francisco, and was featured in the hugely popular documentary Somm, about the quest to become a Master Sommelier. So needless to say, whatever he does next will be something for wine freaks especially to watch out for.
